 Sweet Potato Wedges, with Kale and Sausage
Ingredients:

olive oil
a little paprika(1/4 - 1/2 teaspoon depending on how hot and spicy you like it)
sweet potatoes, sliced lengthwise into quarters
Kale
Sausages
Knob of butter
salt & pepper

Method:

Preheat oven to 200 C.
Lightly grease a baking tray, or line with baking parchment.
In a large bowl, mix olive oil and paprika,
Add sweet potato, and toss to coat.
Place on the prepared baking tray.
Bake for 40 minutes in preheated oven, add the sausages after about 10 mins.
Strip the kale from its stems and rinse it in water.
Melt the butter in a sauce pan and add the slightly wet kale.
Keep stirring until it has wilted, season with salt and pepper.
Then serve with the sausages and wedges.
