 Sweetcorn Quiches
200g sweetcorn (cooked)
150-175g short crust pastry
100g streaky bacon, rinds removed & cut into 1cm strips
1 large egg
75ml milk
salt & freshly ground black pepper
1 tablespoon chopped fresh parsley.

Heat oven to 190c (375f) gas 5
Roll out pastry 1/4 inch thick, cut into 3 inch rounds, prees rounds lightly into 12 patty tins & refrigerate.
Fry bacon for 3-5 minsutes & drain on kitchen paper.
Mix bacon with sweetcorn & put into pastry cases.
Beat the egg with milk, season & stir in parsley.
Spoon over bacon & sweetcorn mixture.
Bake in the oven for 20-25 mins until filling is firm.
Serve hot or cold.
