 Veggie Burgers
Ingredients:

450g potatoes, peeled & halved
2 medium carrots, halved long ways
250g parsnips, cut into chunks
1/2 onion, finely chopped
2 tbsp plain flour
1 egg, lightly beaten
sunflower oil
salt & pepper
grated cheese

Method:

Part boil the potatoes, carrot, parsnips & swede for 10 minutes. Drain & cool.
Coarsley grate the part boiled vegetables into a bowl and stir in the chopped onion, flour egg & seasoning to taste. make small burger shapes with the mixture.
Lightly oil a frying pan. Add the burgers and fry for about 3 - 4 minutes on both side until crispy and golden.
Top with grated cheese
