 Tomato Plum Salad with Beans & Chorizo

410g can mixed beans
baby plum tomatoes
cooked chorizo
chopped fresh coriander.
Juice of 1 lime
3 tablespoons olive oil


Drain and rinse a 410g can mixed beans or pulses and put into a large bowl with the baby plum tomatoes, halved lengthways, cooked chorizo, skinned, halved and thickly sliced, and a good handful chopped fresh coriander.
Add the juice of 1 lime, 3 tablespoons olive oil, and season.
Toss together and set aside for 10 minutes, until juicy.
Divide between plates and serve with chunks of crusty bread to mop up the juices, if you like.

This recipe is equally as good served hot, Roast the baby plum toms and Chorizo together in a little olive oil, before adding in the beans and and warming it all through, and then at the end add the herbs, lime etc.
