Asparagus roasted and wrapped in Parma ham
Serves 4


12 spears of asparagus
25g Parmesan cheese
2 tbsp olive oil
Grated zest of ½ lemon
Salt and pepper
8 slices Parma ham


Preheat the oven to 200°C/fan180°C/gas 6. Cook the asparagus spears in salted boiling water for a couple of minutes.
Drain, refresh in cold water, and then drain again.
Mix the olive oil and lemon zest and a couple of twists of pepper in a bowl.
Add the asparagus and stir gently to coat.
Lay the Parma ham out and give a good sprinkle of Parmesan on each one.
Make bundles of 3 spears and wrap each in a Parma ham slice.
Place in a baking tray and bake in the oven for 10 minutes until the ham is crisp.
Serve this with a little melted butter and some sliced brown bread.
