 Potatoes - Jackets (Stuffed)

4 to 6 baking potatoes
2 red onion, finely chopped
2 breakfast flat mushrooms, sliced
1 red pepper, diced
1 garlic clove, crushed
50g butter or margarine
100g cheese, grated
salt and pepper to season

1.Bake the potatoes at 230°C/450°F/gas mark 8 for just over one hour or until soft.
2. Halve the potatoes, scoop out the insides and mash until soft and fluffy.
3.Saute the onion, mushrooms, red pepper and garlic in the butter for a few minutes.
4.Place the potato skins on a baking tray. Mix together the mashed potato, the vegetables and half the cheese. Season to taste.
5. Put the mixture back into the potato skins and top with the remaining cheese. Return the potatoes to the oven, turned down to 190°C/375°F/gas mark 5 and cook for about 20 minutes.
