 Potatoes New – With Crushed Tarragon, Parsley & Mi
Ingredients

800grms Baby New Potatoes
80grms Butter
Salt & Freshly Ground Pepper
Handful of Fresh Tarragon, Parsley and Mint roughly chopped

Method

Cook the Potatoes in a large pan of boiling until a knife slides through the centre of one of the biggest ones easily, about 12-15 minutes. Drain, then return the potatoes to the now-dry pan and place over a low heat. Add the butter, salt and pepper and, using a potato masher, very gently crush the potatoes. Sit gently so that the potatoes are covered with the butter and seasoning. Sprinkle over the herbs and serve immediately.
