Brocolli & Stilton Soup

Ingredients:
1 big head of broccoli, cut into florets. 1 big potato, peeled and cut into small pieces. 1 big onion peeled and chopped Veg or olive oil Water Stock cube Stilton (as much as you like, the more the cheesier), chopped into small pieces. Pepper to taste.
Method:
Gently fry the onions in a sauce pan until softened. Add the potato and add enough water to cover the veg. Add the stock cube, and bring to the boil for a few minutes until the potatoes are tender. Add the broccoli and simmer for about another 5 mins. Take off the heat, add the cheese, and using a hand blender blend until smooth. Add pepper to taste.
