 Brocolli & Stilton Soup

1 big head of broccoli, cut into florets.
1 big potato, peeled and cut into small pieces.
1 big onion peeled and chopped
Veg or olive oil
Stock cube
Stilton (as much as you like, the more the cheesier), chopped into small pieces.
Pepper to taste.


Gently fry the onions in a sauce pan until softened.
Add the potato and add enough water to cover the veg.
Add the stock cube, and bring to the boil for a few minutes until the potatoes are tender.
Add the broccoli and simmer for about another 5 mins.
Take off the heat, add the cheese, and using a hand blender blend until smooth.
Add pepper to taste.
