Baked Butternut Squash with Garlic

Ingredients:
3 Butternut Squash, peeled & cut into 1 inch cubes 2 tbsp fresh parsley, chopped finely 2 tbsp olive oil 2 garlic cloves, squashed 1 tsp salt 1/2 tsp pepper 1/3 cup parmesan cheese
Method:
Heat oven to 400f / 200c / gas mark 6 In a large bowl, combine the parsley oil, garlic, salt & pepper Add butternut squash & toss to coat. Transfer to an ungreased shallow baking dish Bake, uncovered for 50 - 55 minutes or until the butternut squash is tender
