 Stir Fry Vegetables with Rice

1/2 cucumber.
2 spring onions, sliced.
1 crushed garlic clove.
2 thinly sliced carrots.
1 small red, yellow or orange pepper, seeded and sliced.
3 tbsp sunflower oil.
1/4 small cabbage (green or white) finely sliced into strands.
4 cups cooked rice.
2 tsbp light soy sauce.
1 tbsp sesame oil.
salt and black pepper.
fresh parsley.
4 oz unsalted cashew nuts.


Halve cucumber lengthways, scoop out seeds and slice the flesh.
In wok or large frying pan, stir fry the onions, garlic, carrots and pepper in the oil for 3-4 mins.
Add the cabbage and cucmber and stir-fry for another couple of mins.
Mix in the rice, soy sauce, sesame oil and salt and pepper.
Reheat thoroughly, stirring all the time.
Add the chopped parsley and the nuts.
Serve hot.
