 Parsnip & Ginger Bake

500g/1lb Parsnips
Root Ginger (small piece)
4 tbs Cream
2 Eggs
30g/1oz Butter
Zest of 1/2 Lemon


Cook parsnips and drain.
Add ginger, cream, eggs, butter and lemon zest.
Mix and mash together.
Spoon into a buttered pie dish and place in a heated oven 190C-200C for 20 - 30 minutes.
