 Mushrooms on Toast
Ingredients:

Bread - any bread will do
Mushrooms (any type), sliced
Red Onion sliced,
Garlic Clove crushed or chopped
A teaspoon of Rosemary very finely chopped
Double cream
Butter
Salt/pepper

Method:

Firstly, over a low heat, sweat the onions in the butter in a covered pan, until softened.

Turn the heat up to medium and add the mushrooms, and fry until cooked (You may need to add a little olive oil at this stage, as the mushrooms absorb the butter).

Add the garlic and the rosemary then fry for about a minute, with constant stirring.

Add a few spoonfuls of cream & season to taste

Toast your bread, pour over the mushrooms and serve.
