 Apple & Plum Chutney

450 g sugar
1 litre malt vinegar
450 g apples, peeled, cored and chopped
1 .4 kg plums, stoned and quartered
450 g onions, skinned and chopped
225 g raisins, chopped
225 g carrots, peeled and sliced
25 g salt
2 level tsps ground cloves
2 level tsps ground cinnamon
2 level tsps ground ginger
2 level tsps ground allspice


Put the sugar and most of the vinegar in a pan and bring slowly to the boil.
Add the fruit and veg.
Blend the salt and spices with the remaining vinegar and stir into the ingredients in the pan.
Bring to the boil, reduce the heat and simmer until of a thick consistency, with no excess liquid.
Pot into sterilized jars.

This makes about 2.5 kg (half the levels, if you want to make less)
