 Brussels Sprout Soup
1lb sliced onions
Pinch of sugar
Knob of butter
1lb Brussels sprouts, trimmed and halved
Salt, pepper and a sprig of thyme
2pts chicken/veg stock – made from 2pts boiling water and 2 or 3 chicken and/or veg oxo cubes
(Optional) 8 slices wafer thin smoked ham

Put the onions, sugar and butter in a saucepan and cook gently until caramelised, not brown (about 30 minutes)
Add the Brussels sprouts, seasoning and stock and boil for 15 minutes

Liquidise thoroughly, adding ham at this stage if wanted.
