Parsnip And Sweet Potato Mash

INGREDIENTS:
• 1 medium parsnip • 1 sweet potato • 1 onion • 1 clove of garlic • olive oil • butter • 1-2 tbsp semi skimmed milk
PREPARATION- Takes 25 minutes
Firstly, chop and dice the onion. Peel and slice the vegetables and place into a saucepan of boiling water with a dash of olive oil. Cook for around 20 minutes or until soft. Take off the heat and drain. Chop the garlic into very small pieces. Heat a small amount of olive oil in a pan and cook the garlic and onion for around 2-3 minutes on a low heat, be careful not to burn it. Mash the vegetables with a tiny knob of butter and add the milk, onion and garlic. Heat for a further 2 minutes, stirring until soft and creamy. Allow to cool and serve with a little pepper required.
