 Tomato soup
Preparing time: 55mins


450g/1lb Ripe Tomatoes, skinned and chopped
1 Onion, chopped
1 Carrot, grated
1 Stock Celery, finely chopped
2 rashers Bacon, chopped
25g/1oz Butter
900ml/1-1/2 pts Fresh Stock
Salt and Pepper
Bouquet Garni


1. Cook the bacon in a pan until the fat begins to run but the bacon is not brown. Add the butter to the pan then add the vegetables and toss in the fat to coat.

2. Add the stock, herbs, salt and pepper, cover and simmer for about 35 minutes.

3. Pass through a sieve or blend in a food processor until quite smooth. Return to the pan and reheat before serving.
