 Apple Cake

• 2 large cooking apples
• 75g softened unsalted butter
• 100g soft brown sugar
• 75g caster sugar
• 2 large eggs, beaten
• 225g plain flour
• 2tsp baking powder
• ½ tsp ground mixed spice
• ½ tsp ground cinnamon
• Approx. ¼ finely grated whole nutmeg (optional)
• 1-2 tablespoons milk
• Grated rind of one lemon (wax washed off)
• Vanilla extract to taste (I use a splash of home-made vanilla extract) (Also optional)


1. Pre heat oven to 180*c/350*f/gas 4
2. Line bottom and sides of a 20cm/8 inch round tin with greaseproof paper
3. Beat sugar and butter until soft and pale
4. Add egg bit by bit and beat in
5. Peel and core apples and chop into small chunks (approx. 5mm) and set aside
6. Sift flour, baking powder and spices into the egg/butter mix and fold in with a metal spoon
7. Fold in the apple, lemon rind, vanilla and milk. Pour/scoop/dollop into tin
8. Make a hollow in the centre of the tin (don’t worry, as the cake cooks this will fill in again but helps it to cook evenly and helps to give a flat top to the cake rather than a dome)
9. Bake for 1 hour until a skewer test comes out clean
10. Cool on a rack. You can dust icing sugar over the top but I never do. Tastes equally lovely cold or warm with ice cream or curstard.
