 Cauliflower Cheese

1 medium Cauliflower cut into pieces
2 dessert spoons of butter
2 dessert spoons of plain flour
1/2 pint of milk
1-2 big spoons of whole grain mustard (optional)
a handful of grated cheese.


Boil the cauliflower for about 5 mins, until just under cooked and drain.

While the cauliflower is cooking, melt the butter in another pan, add the flour and mix with a whisk until smooth.

Add the milk, and gently whisk whilst it comes up to the boil and thickens.

Mix in the mustard. (optional)

Put the Cauliflower in an oven proof dish, pour the sauce over, and sprinkle on the cheese.

If you are serving straight away, you can grill the top until the cheese is just turning brown.

If you make it in advance, bake it in the oven for about 30-45 mins just before serving.
