 Courgette Soup

1kg courgettes
250g potatoes peeled & scrubbed
2 gloves garlic peeled & crushed
1 medium onion chopped
30ml olive oil
150g soft cheese
handful fresh chives
1 1/2 pints water (or mild stock)


Wash courgettes & chop into chunks. cut potatoes into small cubes.
Heat oil gently in large pan add onion & garlic cook for 5 mins until soft.
Add potatoes stir & cook gently covered for about 15 mins.
Add courgettes & cook for about 5 mins.
Add water or stock bring to boil & simmer until potatoes are soft.
Remove from heat & liquidise.
Add cheese & herbs season to taste with salt & pepper.
