  Pineapple and Ginger Dessert with Strawberries

115g/4oz root ginger
225g/8oz sugar
½ pint/280ml water
1 fresh pineapple
A punnet of
A few fresh sprigs of mint


Peel and cut the ginger in half lengthways and slice.
Add the slices to a pan with the sugar and ½ pint/280ml water.
Gently heat until the sugar dissolves into the water, then boil for a few minutes to make a syrup, then leave to cool.
Peel and core the pineapple and then slice and put the pineapple into the syrup. Marinate for an hour or more.
Serve the pineapple with strawberries
and, if you like, some fresh mint.
Serves 4 to 6
